Thoughts on having a 404 "not found" page 301 redirect to a specific page?

I used to have 100's of doorway pages. I am trying to clean my site up in an effort to simplify my site and avoid a potential penalty from Google. So I deleted all of those pages. I individually 301 redirected as many pages as i could - but I still noticed broken links from ranked google results

pretty much all broken links on my site should be redirected to one specific page - what are your thoughts on the SEO impact of having my 404 do a 301 redirect to that one page?
