Better to have multiple product listings or multiple options for a single product?

I'm building out an ecommerce store and was wondering about something. I sell items that come in a variety of combinations of materials, lengths, options, etc. I have been planning on simplifying the product listings and having each item be fully customizable on the product page.

However, I was wondering if there would be any benefit for SEO to break out some of those customizations into separate product listings? I'm new to SEO, so I didn't know if using those additional product listings as internal links and having more keywords, etc. would be better than simplifying. My store will be brand new so I want to do whatever will give me the most impact starting from zero.

For example: If I sell rope, I could just list that one item on a single page with customizable options like "color", "length" "material", etc. Or, I could separate those into their own product pages, such as "Red rope", "blue rope", "plastic rope", "natural fiber rope", etc.

I wouldn't go crazy with every permutation possible, but wondered if it would provide any benefit for SEO?
