Google Thumbnail not my JSON Image

Hi All,

I am trying to get some things setup for my dad's new site and was reading through the structured data information/tags to build a nice dynamic listing for him. This is my first time ever trying SEO and while I'm in IT, this is not what I do. I feel I understand most things when reading the documentation on schema.org and such, but please explain as a non-SEO person where possible.

When I use Google's Structured Data Testing Tool, on both my JSON code itself and the live site, the info is correct (no errors/warnings) and the preview comes back with the proper thumbnail. However, when I search on my phone, it's showing a random background image on the site. I manually indexed the site yesterday evening, and the JSON code has been there longer than that. The site is has only been live a few days, though. Any idea as to why this would happen?

Unsure if it's relevant, but it's a Wix site.
