I just lost a bunch of image thumbnails in mobile Google Search Results

I have a shopify store and I was getting a lot of nice looking results with 1 or more image thumbnails. But it seems we have lost a good amount of those thumbnails and now the results are just plain text. Does anyone know what could be wrong? What exactly does Google look for when generating those thumbnails? The weird thing is that some results still have them and some went from multiple images to one.

I have been doing a lot of optimisations recently both in terms of page performance and SEO so I wonder if I broke something. One possible culprit is the addition of lazysizes for lazy loading images. I also added AMP pages but the thumbnails were showing after the AMP pages were indexed and showing up in the results. I’m not sure if Google picks up the images from the AMP pages or the original.
