I just saw a page get rich results for a piece of information marked up in schema but not visible to the user!!

Google has said content not visible to the user should not be included in schema markup. But are there any exceptions?

I saw a page get the rich result "In stock" for a product. They must have obviously used the "Product" schema and schema.org allows the type "availability" to show the availability of the item by using the property "Instock".

However, I did not find the information on whether the stock was in stock or out of stock on the website.

Is this a mistake or Google does shut eyes to some of these things?
