Posts targeting keywords vs cornerstone posts

I am restructuring my hobbie website with over 200 articles. So far, my strategy has been to target specific keywords in the post, title, and url (~1000 w). However, I am now considering if for current SEO, a larger post (~6000 - 8000 w) containing a wide range of information would not be more suitable (and useful to readers). What are your opinions on the organization of content on the website?

In other words, without disclosing the topic, would it be better to have a unique post for fork, knife, spoon to target this specific search query or to have a big post on kitchen utensils targeting these keywords on headings and sections?
