Is 1,000 Words of Content for SEO really a thing?

When I search for stuff on Google and click on the first 3 links, most of the text is less than 1,000 words. Some are just even straight up less than 500 and they rank high anyway. But why are there SEO people that want 1,000 words on their webpage? Almost every person that is new to the business tells me about having to write 1,000 because Google likes it, but imo as a reader and not an SEO writer, I stay away from long articles because it takes too much time to read and I just want to get straight to the point on what I'm reading. Also, paragraphs scare the reader.
