Changing Domain Names

Working with a client to develop a new website. Current website is built on Wix, new website will be on Wordpress.

With a new website, they also want a new domain. Current website: examplewebsite.com. New website: examplesite.co.

Is there any benefit to changing domain of current website to examplesite.co while new website is being built? (Will take approx. six weeks.) Would that help establish domain authority or offer any SEO benefits?

Or would you simply setup 301 redirects when new website is ready?
