Any guides to remake a website and pass the seo juice sucessfully?

I am looking for guidelines or tutorials on best practices.

I am redoing an e-commerce website for a client, moving from open-cart to shopify. I need to know how not to lose the organic traffic. The original website is 17 years old and is driving a consistent amount of organic traffic, despite looking like a 17 yo site.
