Different niches per subdomain vs unique domains

Google treats subdomains like unique domains. So from a technical side of things, multiple subdomains and multiple unique domains would be treated the same. Is there any reason not to go down the road of using subdomains when you want to create a domain to a broad group of related niches and use subdomains to target them individually?

For example, say you make a domain for DIY. DIY is massive, you could have gardening/landscaping, construction, woodworking, cooking as things that you do yourself.

Is there any reason not to use subdomains for something like this? So you would have garden.mydiysite.com, construction.mydiysite.com, cooking.mydiysite.com . Im struggling to see the pros and cons of subdomains over unique domains in a scenario like this.

Perhaps a better example would be hobbies. Hobbies are infinite but each one is a niche. At what point should you be making a new domain for something over making a single hobby domain and using subdomains for each hobby
