Ideally How Many 'Supporting Articles' Should a Hub Page Have?

Hear me out before we say how long is a piece of string, as i know my question warrants an answer like this.

Let me give you some details:

So i have a blog with around 100 articles, and i recently learned about the Hug Page method, with spokes being supporting articles.

However, as my content was already written/published, im having a hard time dividing it into hubs/spokes. As i aimed at large keywords for nearly 70% of the articles, so some hierarchy is not directly obvious.

With some thought and keyword research, it seems i could actually write a monster pillar post and connect 25 of the articles to that post, and it would still make sense in my mind. The pillar post would be targeting a larger keyword so it makes sense hierarchy-ily? lol, but im unsure if that would be an overload or too much?

To tie in the remaining articles, i could write some pillar content for those, but the targeted keywords in these cases aren't necessarily higher, so im not sure how to approach those, should the pillar always be targeting a larger volume?

Any help in structuring hub/spoke would be really appreciated, thanks guys!
