Questions on Outsourcing Article Writing

I have a few questions on outsourcing my article writing:

1. I read somewhere, that I should have the writer sign a document that explicitly transfers the rights of the article(s) over to me, since by default they maintain these right and would be legally allowed to sell the same article to other people? (Maybe I phrased this wrong, but do you guys know roughly what I mean? Heard about this?)
2. How do you protect from plagiarism? Any recommendations / tools?
3. Do you usually give credit? I.e. mention their name as the author in the post on your site? Are articles that don't give credit more expensive, generally? Are there some unwritten rules here I should be aware of?
