E-Commerce product images and SEO. Balance between quality and performance. Any solid data on this?

I run a bunch of e-commerce sites. I recently got fed up with my loading times and general performance. I'm in the process of rebuilding my platforms from the ground up. I was able to get my loading times down to 1-3 seconds. However, I'm still not sure what to do with product images. It's obviously extremely important to show high quality images to your customers but at the same you need to make sure they can seamlessly navigate your store without being frustrated by loading times.

I've analysed my competition currently dominating the SERPs. Even their single product pages are between 3-15MB. They have huge beautiful product images. Yet Google seems to love them.

I'm considering converting all my images to a next gen image format and just optimizing for looks. Obviously all the file names and tags will be optimised too.

Do you guys think image size matters that much now days or is Google smart enough to figure out it's a retail site and it needs to have high quality images?
